Spicy Baked Beans

After another sleepless night I’ve decided to pay some serious, much needed, attention to this blog which i have well and truly been neglecting lately.  As its been soo hot of late I really haven’t been eating anything other than salad and flatbread which has gotten some what repetitive.

So today I’m making spicy homemade baked beans, a really quick and easy dish that you can whip up when you’ve got a spare few minutes and they keep well in the fridge for several days.

Ingredients – Serves 2 

  • 300g can of haricot beans (drain & rinse the beans/195g once drained) 
  • 1 small brown onion, diced
  • 250g passata
  • 1 red chilli, diced with seeds in
  • 1 clove of garlic, finely chopped
  • 3 tsp cider vinegar
  • 2 tsp hendersons relish (Worcestershire sauce works fine too)
  • 2 tsp brown sugar
  • 40g chorizo, chopped (optional)
  • 1 heaped tsp chopped fresh parsley (optional) 
  • large drizzle of olive oil
  • black pepper to taste

And how to do it…

Heat the olive oil in a saucepan, and add the onion, garlic, chili and chorizo. Cook over a medium heat for 4-5 mins or until the onion is soft and translucent.

Add the passata, cider vinegar, hendersons relish, brown sugar and mix well.

Next add the haricot beans and simmer for around 5 mins until the mixture is piping hot and the mixture has thickened slightly. Throw in the chopped fresh parsley and mix in just before serving.

Season generously with black pepper and serve on top of hot toast…dyl-icious!!

As i am a cheese monster i usually sprinkle a little grated cheddar on top too 😉
