Crushed Pea, Mint & Goats Cheese Ciabatta

Crushed Pea & Mint Ciabatta…yummy!!

This is recipe is soo quick and easy to knock together from things i usually have in the house. It’s also a great way to sneak some vegetables onto cheese on toast.

Ingredients: Serves 2

  • 1 cup frozen garden peas
  • 1 tsp crushed garlic
  • 1 tbsp homemade or shop bought mint sauce
  • 1 tbsp olive oil
  • 1 tsp chopped pine nuts
  • 4 slices of ciabatta (switch to gluten free if required)
  • 50g goats cheese (feta cheese works really well too) 
  • salt and pepper
  • peashoots (optional)
  • drizzle of balsamic glaze (optional)


And how to do it:

Defrost the peas in a colander under luke warm water.

Add the peas, garlic, mint sauce, olive oil and pine nuts to your food processor and pulse a couple of times or until you’ve reached your desired consistency (personally i like mine a little lumpy).

Taste and season with salt and pepper.

Lightly toast your ciabatta slices on one side.

Load the un-toasted side of your ciabatta with the pea crush and top with goats cheese (dividing equally between each ciabatta slice).

Return your loaded ciabatta under the grill for a 2-3 mins or until the goats cheese is lightly browned.

Serve with pea shoots or a salad of your choice and a drizzle of balsamic glaze.
