Crispy Buffalo Chicken Bites

Buffalo Chicken Bites

These Crispy Buffalo Chicken Bites are perfect for satisfying even the strongest junk food craving!!

I think everyone needs a cheat day once in a while and I absolutely love it when Dan makes me these Buffalo Chicken Bites, inspired from the time he lived and worked in New York.

Ingredients: Serves 2-3 

Crispy Buffalo Chicken

  • 2 Chicken Breasts diced into chunks
  • 3 tsp of Garlic Granules
  • 1/2 tsp Salt
  • 1 tsp Cracked Black Pepper
  • 3 tsp Smoked Paprika
  • 3 cups Honey Nut Cornflakes smashed into breadcrumbs
  • 1 tbsp. Plain Flour
  • 1 egg
  • Dash of Milk
  • 1/2 cup Franks Red Hot Buffalo Sauce

Blue Cheese Dip

  • 3 tbsp. Low Fat Sour Cream
  • 2 tbsp. Light Mayonnaise
  • 3-4 dashes Henderson’s Relish (Worcestershire Sauce works well too but my husband is from Sheffield therefore Henderson’s rules)
  • 35g Blue Cheese, crumbled (i used Yorkshire blue but other blue cheeses work well too)


And how to do it…

Preheat your oven to 180 degrees.

Then grab a mixing bowl and add the garlic granules, salt, pepper, smoked paprika and honey nut cornflakes and mix thoroughly.

Next, place the diced chicken in a zip lock or sandwich bag and add the plain flour, shake the bag well until the chicken is fully coated (don’t forget to make sure the bag is closed before you shake)

In a separate bowl crack the egg; add the milk and beat.

Take each piece of diced chicken and one by one and dip them firstly in the egg mixture and then in the cornflake mixture until the chicken is fully coated in the cornflake mixture. Then place on a non-stick baking tray.

Bake the chicken for around 8-10mins each side or until cooked throughout.

Whilst the chicken is cooking, grab a bowl and add the low fat sour cream, light mayonnaise, Henderson’s relish, crumbled Yorkshire Blue cheese and salt and pepper to taste give it a good mix so the Yorkshire Blue really infuses into the creamy mixture.

Finally take yet another bowl and add the cooked chicken bites, toss in the Franks Red Hot Buffalo sauce and coat well.

Serve these crispy buffalo chicken bites with creamy Yorkshire Blue cheese sauce and celery sticks (you may think celery sticks is a strange choice but trust me it works but…don’t forget to peel the outside of the celery it makes such a difference). Mmmmm dyl-icious!!
